    1. Blend the bananas, eggs, and oats until smooth (using a blender is ideal), then cook the batter on a skillet as you would with regular pancakes. Since these are more delicate than flour pancakes, let them cook fully on one side before flipping.

    2. For larger mix-ins like berries or nuts, sprinkle them onto the batter after it’s on the skillet, before flipping. Too many mix-ins can cause them to fall apart, so it’s best to add them afterward.

    3. Garnish with your favorite toppings after cooking.

Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1 cup oats

Instructions

    1. Preheat a skillet on low heat.
    2. Blend the bananas, eggs, and oats on low speed until smooth.
