  1. Preheat the oven to 350 F and line a baking sheet with a silicone mat or parchment paper.
  2. Remove the apples from the can and chop them into smaller pieces. Mix in the ground cinnamon and nutmeg and set aside.
  3. Roll one of the pie crust onto the silicone mat.
  4. Spread the caramel sauce and chopped apples onto the pie crust.
  5. Cut the second pie crust into ¼-inch strips and place them over the apples in a lattice pattern.
  6. Use a round cookie cutter to cut rounds into the flattened “pie”. Try to make the rounds as close to each other as possible to use as much of the pie as you can.
  7. Remove the excess and gently separate the cookies to about ½-inch from each other.
  8. Make an egg wash by beating one egg with 1 tsp water and brush the tops of the cookies.
  9. Bake for 20-25 minutes or until slightly golden. Let them cool down for about 5 minutes on the cookie sheet, and then transfer them to a cooling rack to cool down completely.
