How to Make Buffalo Chicken Zucchini Boats:

    1. Preheat your oven to 400°F.

    2. Prep the zucchini by cutting them in half lengthwise and scooping out the center using a melon baller or small spoon. Place the zucchini halves in a greased 9×13 baking dish

    3. In a skillet, cook and crumble the ground chicken until it’s fully cooked. Stir in the buffalo wing sauce and ranch seasoning mix, then fill the zucchini boats with the chicken mixture.

    4. Top the stuffed zucchini with about 2 cups of shredded mozzarella cheese, cover the dish with foil, and bake for 30 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese starts to brown.
