How to Make Carrot Cake Mix Cookies
1. Line two baking sheets with parchment paper and preheat the oven to 350 F.
2. In a large bowl, mix the carrot cake mix, oil, and eggs until well combined.
3. Scoop about 2 tbsp of mixture into your hands and roll them into balls.
4. Place these balls on the prepared baking sheets and bake for 9-11 minutes. Don’t wait for them to get golden. If you see them starting to change color, remove them from the oven. They will be soft to the touch and harden as they cool down.
5. Let them cool down on the baking sheet for about 5 mins, and then transfer them to a cooling rack to cool down completely.
6. You can serve them with cream cheese frosting on top.

These cookies will keep fresh for about 3 days when stored in an airtight container at room temperature if not frosted. If you frost your cookies with cream cheese frosting, you need to refrigerate them in an airtight container.

Cream cheese frosting is very easy to make! All you have to do is beat together 8 oz of softened cream cheese, ½ cup softened unsalted butter, 2 cups powdered sugar, and 1 tsp vanilla extract until well combined and smooth. You can even sprinkle a bit of ground cinnamon on top after frosting the cookies for a special touch!
