How to Make Chocolate Strawberry Dream Bars

    1. Line an 8×8-inch baking dish with parchment paper, leaving some paper hanging off the sides for easy removal.

    2. Using a food processor, crush 20 oreo cookies until they have a sand-like texture.

    3. Make the crust: mix the melted butter and crushed oreos until well combined. Press the mixture into the bottom of the prepared pan and place it in the freezer while you make the rest of the layers.

    4. Make the chocolate pudding layer: in a medium-sized bowl, whisk together the chocolate pudding and 1 ½ cups of milk until well combined. Place in the fridge to set.

    5. Make the cheesecake layer: using a hand-held or stand mixer, beat the cream cheese until light and fluffy. Add the vanilla extract and powdered sugar and beat until well combined. Using a rubber spatula, mix in 1 ½ cups of cool whip until well combined.

    6. Assemble the bars: remove the crust from the freezer and spread the cream cheese mixture evenly over the crust.

    7. Spread the chocolate pudding over the cream cheese mixture.

    8. Spoon the strawberry filling over the chocolate pudding and spread it evenly over the whole surface.

    9. End with the remaining cool whip spread over the strawberry filling. Refrigerate the bars for at least 3 hours before removing them from the pan and cutting them. I like to freeze them for easy and clean cutting!

Can I Make Chocolate Strawberry Dream Bars Ahead of Time?

Absolutely! In fact, I like them better when frozen because it makes them easier to cut and serve. You can assemble the bars one or two days in advance, cover the pan with plastic wrap, and store in the freezer. When ready to serve, sit the pan in the sink with a little water in it to soften the bottom and make removal easy. Cut the bars, decorate them with syrup and extra cookies, and serve. You can serve them frozen or let them thaw out a little before serving them.

Do I Need A Mixer to Make This Recipe?

No, you don’t need a mixer or a food processor. You can make the cream cheese filling by whisking the softened cream cheese and the powdered sugar and vanilla extract. The secret is having the cream cheese at room temperature so it’s easy to mix.

To crush the cookies, you can place them in a zipper bag and use a rolling pin to crush them as finely as you can.
