Going to a restaurant and ordering fajitas is always a sizzling, mouth watering experience.
But in reality, who has time to do that at home? Or the special skillets they use?
This Fajita Baked Chicken is our easy, oven baked, homemade version of chicken fajitas.
Chicken breasts are slathered in a cream cheese mixture and then baked with the classic fajita veggies and cheese, for an outstanding meal.
Ingredients for Fajita Chicken Bake
- Boneless, skinless chicken breasts. My family likes white meat, but if you are a dark meat lover, use boneless chicken thighs. Just cook them for 5 minutes longer.
- Cream cheese is the base for the rub. It makes the chicken tender as it bakes.
- Jarred salsa. You can use mild, medium, or hot depending on your preference.
- Sour cream to soften the cream cheese mixture. You can add a splash of milk instead.
- Fajita seasoning to flavor the cream cheese mixture and give the chicken that classic fajita flavor.
- Red onion thickly sliced. You can use any type of onion you have on hand. I love the color red onion gives this bake.
- Red and green bell peppers. You can use yellow or orange as well to make the dish more appealing.
- Mexican cheese blend, or your favorite shredded cheese.
How to Make Fajita Chicken Bake
1. Preheat the oven to 375 F and spray a 7×11-inch baking dish with cooking spray.
2. Make the cream cheese rub: mix the cream cheese, sour cream, salsa, and fajita seasoning in a small bowl until well combined.
3. Place the thin-cut chicken breasts in the baking dish and spread the cream cheese mixture evenly over them.
4. Top with the sliced veggies and Mexican cheese blend, and bake for 30 minutes or until the chicken is fully cooked and reaches an internal temperature of 165 F. The cooking time will depend on the thickness of the chicken breasts used.
Can I Freeze Fajita Chicken Bake?
Yes, you can. If I know I’m going to make this meal to freeze it, I like to use a disposable foil baking pan, let the meal cool down completely, cover it with plastic wrap and foil, and freeze for up to 3 months. This way, when I’m ready to serve it, I just let it thaw in the fridge overnight and reheat it in the oven using the same pan! Easy peasy.
What to Serve with Fajita Chicken Bake?
You can serve this delicious bake with Spanish rice and black beans. If you don’t have Spanish rice, white rice is great too. Refried or baked beans are a great side dish too. You may even throw in a margarita!

- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- ½ red onion, sliced
- 1 ½ cups Mexican cheese blend
