Salisbury steak is a great option for low-carb diets.
Regular Salisbury Steak uses breadcrumbs to make the patties, but we replace them with almond flour.
To make the gravy, instead of using flour or cornstarch, use xanthan gum. You can’t even taste the difference and feed your family a healthy low-carb meal!
Ingredients for Low-Carb Salisbury Steak with Mushroom Gravy
- Ground beef. You can use 80/20 or lean ground beef. I prefer using lean ground beef to reduce the calorie content in the patties.
- Chopped onions give moisture and flavor to the patties as well as the gravy. Use some for the gravy, and some for the patties.
- Egg to bind all ingredients together and help the patties hold their shape.
- Almond flour also helps bind all ingredients together and is low in carbs.
- Worcestershire sauce gives umami flavor to the ground beef patties as well as the gravy.
- Parsley flakes. Paprika, garlic powder, salt, and pepper to season the meat.
- You can use white, brown, shiitake or your favorite mushrooms to add to the gravy.
- Garlic combined with the onion and mushrooms make the gravy extra flavorful.
- Beef broth is the base for the gravy. Use low-sodium for a healthier meal.
- Xanthan gum is used as a thickening agent instead of flour or cornstarch.
- Freshly chopped parsley for garnish
How to Make Low-Carb Salisbury Steak with Mushroom Gravy
1. Make the patties: mix the ground beef, ⅓ cup chopped onion, ¼ cup almond flour, egg, Worcestershire sauce, parsley flakes, paprika, garlic powder, salt, and pepper in a large bowl until well combined. Divide the meat into 4 oval-shaped patties.
2. Heat the olive oil in a large skillet over medium-high heat and brown the patties for 3-4 minutes on each side. Transfer to a plate.
3. Don’t drain the fat from the patties, and use the same skillet to saute the onions, garlic, and mushrooms until the onions are translucent, about 3 minutes.
4. Pour in the beef broth, scraping the bottom of the skillet. Bring to a simmer.
5. In a small bowl, whisk together the xanthan gum and Worcestershire sauce, and whisk it into the skillet. Return the patties to the skillet, and simmer for 8-10 minutes until the gravy is thick and the patties are fully cooked. Serve with freshly chopped parsley on top.
Can I Freeze Salisbury Steak with Mushroom Gravy?
Let the fully cooked patties and gravy cool down completely and store them in an airtight container. Place them in the freezer for up to 3 months.
To reheat, thaw them in the refrigerator overnight, then reheat in the microwave or in a skillet over the stovetop.
Store any leftovers in the refrigerator for 3-4 days in an airtight container.

- ½ tsp garlic powder
