How to Make Mexican-Style Chicken, Sweet Potato, and Black Bean Skillet
1. Place the sweet potato cubes in a microwave-safe dish, add ½ cup of water, and cook for 4 minutes. It will not be cooked all the way, but mostly cooked.
2. Season the chicken cubes with salt, pepper, chili powder, cumin, and oregano.
3. Heat a large skillet over medium-high heat and add the olive oil. Brown the chicken pieces for 3-4 minutes. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 2 minutes.
4. Add the sweet potato, black beans, tomatoes, green chiles, lime juice, and salsa. Cook for 3 minutes to warm up all the ingredients and help their flavors marry. Remove from heat.
5. Top with shredded cheddar, place the lid on so the cheese melts, and serve with freshly chopped cilantro on top.
Can I Freeze Mexican-Style Chicken, Sweet Potato, and Black Bean Skillet?
This meal freezes well. It’s a good idea to double the recipe and freeze half for later use. Let it cool down to room temperature, store in a freezer bag or airtight container, and freeze for up to 3 months. It was good and easy. Next time I would spice it up, increase the seasoning to give it a little more kick. I did add says Lisa at the table.
