How to Make Mexican-Style Chicken, Sweet Potato, and Black Bean Skillet

    1. Place the sweet potato cubes in a microwave-safe dish, add ½ cup of water, and cook for 4 minutes. It will not be cooked all the way, but mostly cooked.

    2. Season the chicken cubes with salt, pepper, chili powder, cumin, and oregano.

It was good and easy. Next time I would spice it up, increase the seasoning to give it a little more kick. I did add says Lisa at the table.
