I love the texture of orzo. It feels like rice, but with a slightly gummy bite. You can eat it cold in salads, or hot in dishes like this saucy One-Pot Chicken, Parmesan, and Spinach Orzo.

The flavor of Parmesan cheese really comes through and spinach gives it the right amount of fresh greens to make it a full meal.

Ingredients for Chicken Parmesan, and Spinach Orzo

  • Olive oil
  • Boneless, skinless chicken breasts
  • Italian seasoning
  • Sun-dried tomatoes
  • Onion
  • Garlic
  • Baby spinach
  • Marinara sauce
  • Balsamic vinegar
  • Orzo
  • Shredded mozzarella cheese
  • Shredded Parmesan cheese

How to Make One-Pot Chicken Parmesan and Spinach Orzo

    1. Heat the olive oil in a large saucepan or Dutch oven over medium-high heat and brown the chicken along with the chopped onion, chopped sun-dried tomatoes, and minced garlic for 3 minutes. Season with salt, pepper and Italian seasoning.

    2. Add the spinach and cook until wilted, about 2 minutes.

    3. Pour in the marinara sauce, water, and balsamic vinegar. Stir and bring to a boil.

    4. Lower the heat to medium-low and add the orzo. Simmer, stirring every 2-3 minutes, for 15-20 minutes or until tender. If you feel the sauce is getting too thick and the orzo is not yet tender, add ¼ cup more water.

    5. Stir in the Parmesan cheese and add more salt, if needed.

    6. Remove from heat and sprinkle the mozzarella cheese on top. Place the lid on and let the cheese melt for a couple of minutes before serving.

Can I Freeze Chicken Parmesan and Spinach Orzo?

Yes, you can! This dish is great to make ahead of time and freeze. I like to make a double batch and freeze one for later use. Let the orzo cool down to room temperature, place in an airtight container or freezer bag, and freeze for up to 3 months.

You can store any leftovers for up to 3 days in an airtight container in the fridge, and reheat in the microwave.

What to Serve with Chicken Parmesan and Spinach Orzo

This dish is high in protein and carbohydrates but may need a veggie side dish to make it a complete meal. You can serve it alongside steamed veggies, cream of vegetable soup, or a side salad.

You might want to serve it with garlic bread as well!

  • 2 tsp Italian seasoning
  • 1 tsp salt

  • 5 oz baby spinach
  • 24 oz jar Marinara sauce
  • 2 ½ cups water
