- Crushed graham crackers
- Unsalted butter
- Cream cheese
- Powdered sugar
- Vanilla extract
- Crushed pineapple
- Cool Whip
How to Make Pineapple Dream Dessert
1. Make the crust: mix 2 cups crushed graham crackers with ½ cup melted unsalted butter in a medium-sized bowl until well combined. Press this mixture into the bottom of a 9×13-inch baking dish. Place the baking dish in the freezer while you make the filling.
2. Make the middle layer: using a hand-held or stand mixer, beat the softened cream cheese, butter, and vanilla extract until smooth and fluffy. Turn the mixer to low and add the powdered sugar, one cup at a time, until smooth. Using a rubber spatula, mix in one heaping tablespoon of crushed pineapple until well combined.
3. Spread the cream cheese mixture evenly over the cookie crust. Return to the freezer.
4. Make the top layer: place the Cool Whip in a large bowl and gently fold in the rest of the crushed pineapple until well combined.
5. Spread this mixture evenly over the cream cheese mixture.
6. Top with the remaining ½ cup crushed graham crackers and refrigerate for at least 4 hours or overnight. You can also serve this dessert frozen.
