- All-purpose flour
- Pumpkin pie spice
- Baking powder
- Baking soda
- Salt
- Vegetable oil
- Granulated sugar
- Brown sugar
- Eggs
- Vanilla extract
- Pumpkin puree
- Milk
- Unsalted butter
- Cream cheese
- Powdered sugar
How to Make Pumpkin Cupcakes with Spiced Cream Cheese Frosting
1. Line your pan with muffin liners and preheat the oven to 350 F.
2. In a medium-sized bowl, whisk together the dry ingredients: flour, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, whisk together the oil, sugar, eggs, and vanilla extract vigorously until smooth and creamy. Mix in the pumpkin puree.
4. Gradually whisk in the dry ingredients and milk into the egg mixture until smooth.
5. Divide the mixture into the muffin liners, filling them about ¾ full.
6. Bake for 15-20 minutes or until the tops feel firm and a toothpick inserted in the middle comes out clean. Let the cupcakes cool down completely before icing them.
7. Make the icing: using a hand-held or stand mixer, beat the softened butter and cream cheese until fluffy. Add the vanilla extract and pumpkin pie spice and beat until well combined.
8. Gradually add 3-3.5 cups of powdered sugar. If you feel the icing is too thick, add one or two tbsp of heavy cream. Pipe on top of the cooled muffins.
Can I Freeze Pumpkin Cupcakes?
Yes, you can! You can freeze them with or without frosting. Place the cupcakes in a baking sheet and into the freezer until hard, then store in a freezer bag or airtight container for up to 3 months. Let them thaw in the refrigerator and come to room temperature before serving.
