Slow Cooker Sausage and Tortellini Soup This is one of my family’s favorite soups, and one of mine too because it is very easy to make.

Slow Cooker Sausage & Tortellini Soup

The broth is both cream and tomato-based which gives it a balanced flavor.

Soft cheese tortellini pair wonderfully with Italian sausage and spinach and crushed red pepper flakes give it a slightly spicy touch.

Ingredients for Tortellini & Sausage Soup

  • Italian sausage. It is recommended to drain the fat after cooking it.You can use mild or spicy sausage.
  • Chicken broth is the base for the soup. Use reduced-sodium if needed.
  • Diced tomatoes. You can use regular diced tomatoes or Italian-style diced tomatoes.
  • Italian seasoning to give the soup that Italian touch. If you don’t have it, you can use oregano or basil.
  • Cream cheese provides the creamy texture for this delicious soup. Make sure to use it at room temperature and cut it in small pieces so it melts quickly.
  • Crushed red pepper flakes (optional) if you want to add a little heat.
  • Frozen cheese tortellini. You can use dry tortellini but they will take longer to cook.
  • Baby spinach leaves give the soup flavor and color. Add them at the end of the cooking time.

How to Make Slow Cooker Creamy Tortellini & Sausage Soup

    1. Cook the sausage for 4-5 minutes in a skillet over medium-high heat until fully cooked. Drain the fat and add it to the slow cooker.

    2. Pour in the chicken broth, diced tomatoes, Italian seasoning, crushed red pepper flakes, and cream cheese. Cook on low for 4 hours or on high for 2 until the cheese is melted and dissolved.

    3. Add the tortellini and baby spinach, stir, and cook for 30 minutes more until the tortellini are done and the spinach is wilted.

Can I Freeze Creamy Tortellini & Sausage Soup?

Yes, you can freeze this soup. Before placing it in an airtight container, let it come to room temperature. You can freeze it for 3-4 months. To thaw, place it in the refrigerator the night before. Reheat in a pot over the stovetop or in the microwave if only reheating a portion.

  • 16 oz Italian sausage (bulk)
  • 4 cups chicken broth
  • 2 15 oz cans diced tomatoes (with juice)
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes
  • 8 oz cream cheese, room temperature and diced
  • 20 oz frozen or refrigerated cheese tortellini
  • 4 cups baby spinach

Instructions
