My kids love sweet potatoes, so making a nutrient-dense meal is easy by adding ground beef, tomatoes, and cheese!
Ingredients for Southwest Ground Beef and Sweet Potato Skillet
- Onion
- Garlic
- Lean ground beef
- Chili powder
- Cumin
- Dried oregano
- Salt and pepper
- Sweet potato
- Fire roasted tomatoes
- Diced green chiles
- Shredded cheddar cheese
- Cilantro
- Jalapeno (optional)
How to Make Southwest Ground Beef and Sweet Potato Skillet
1. Brown the ground beef with the onions and garlic until no longer pink, about 4-5 minutes. Season with 2 tsp chili powder, 1 tsp cumin, ½ tsp oregano, ½ tsp salt, and pepper to taste. Transfer to a bowl.
2. To the same skillet, add the diced sweet potatoes, fire roasted tomatoes, green chiles, water, 2 tsp chili powder, ½ tsp oregano, ½ tsp cumin, ½ tsp salt, and pepper to taste. Simmer for about 15-20 minutes or until the sweet potato is tender but not too soft.
3. Stir the ground beef into the sweet potato mixture until well combined.
4. Sprinkle the shredded cheddar on top, place the lid on, and simmer until the cheese has melted, about 2 minutes. Serve with fresh cilantro and jalapeno slices on top.
Can I Freeze Southwest Ground Beef and Sweet Potato Skillet?
Yes, you can! Let the dish cool down to room temperature and place in an airtight container or freezer bag. Freeze for up to 4 months. When ready to enjoy, place the frozen meal in the refrigerator overnight, and reheat in the microwave.
If you have leftovers, refrigerate them in an airtight container for up to 3 days.
