- Chicken breast cutlets
- Olive oil
- Egg
- Garlic
- Oregano
- Basil
- Parsley flakes
- Salt
- Pepper
- Grated Parmesan cheese
- Flour
- Butter
- Lemon juice
- Chicken broth
- Red pepper flakes
- Chicken bouillon (optional)
How to Make Lemon Butter Chicken
1. Prepare your dredging station by beating the eggs with the garlic, oregano, basil, parsley flakes, salt, and pepper in a shallow dish. Mix the Parmesan cheese and flour in a separate shallow dish.
2. Dip the chicken breasts in the egg mixture until fully covered on both sides, then press into the Parmesan mixture on both sides until fully coated.
3. Heat the olive oil in a large skillet over medium heat and brown the chicken breasts for 4-5 minutes on each side until crispy and fully cooked, or the internal temperature of the chicken reaches 165 F. Transfer to a plate and cover to keep warm.
4. If you have too many burnt bits and pieces in your skillet, remove them and melt the butter. Saute the garlic for 30 seconds until fragrant.
5. Pour in the chicken broth, lemon juice, red pepper flakes, chicken bouillon, and pepper. Gently simmer the sauce for about 2 minutes, then return the chicken breasts to the skillet and cover with the sauce. Check the seasoning and add salt if needed. Serve with mashed potatoes or freshly cooked white rice or pasta.
How to Store Lemon Butter Chicken
Let the chicken breasts cool down completely and place them in an airtight container. Refrigerate for up to 3 days. You can also freeze them for up to 3 months, but I recommend not adding the lemon butter sauce. Freeze the cooked chicken breasts and make the sauce when ready to serve.
Best Way to Reheat Lemon Butter Chicken
Take your chicken breasts out of the fridge and let them sit at room temperature for 20 minutes. You can then reheat them gently in a preheated and greased skillet or in a 350 F oven for about 15 minutes.
The butter in the sauce will have solidified during the cooling process, so just scrape it off the container and add it to the skillet or baking dish.
