4. Heat a large griddle over medium heat and spray with cooking spray. Cook the quesadillas until golden brown on both sides, about 2-3 minutes per side.
What Type of Cheese is Best for Quesadillas?
Mexican cheese blend is the preferred choice, but you can use the melty cheese of your choice. Mozzarella, Monterey Jack, Cheddar, or a combination of any are great choices. Make sure you don’t cook the quesadillas over too high heat or the tortillas will burn before the cheese has a chance to melt.
It’s best to shred the cheese yourself because pre-shredded cheese has anti-caking ingredients and doesn’t melt properly.
How to Reheat Quesadillas?
Quesadillas should be crispy, so using the microwave is not recommended. You can either reheat them in a lightly greased skillet, or in a toaster oven. This way, the cheese melts and the tortillas turn crispy again.

Quesadilla FAQs
What’s the best way to flip a quesadilla?
Slide a spatula in from the closed side (the side without the opening) and flip in one quick motion. Moving quickly helps keep the filling from spilling out. Here’s a helpful tip: use a spatula to press the top lightly before flipping it over. This will help keep the ingredients from falling out.
How can I make quesadillas that stay warm and crispy for a group of people?
Set the oven to 250°F. Arrange the cooked quesadillas in a single layer on a baking sheet. If you have one, set the sheet on a wire rack. This will allow air to circulate. Don’t stack them, or they’ll steam and get soft. They’ll stay fresh while you finish the rest.
What is the best kind of ground beef for quesadillas?
Use lean ground beef (85–90% lean) so the tortillas don’t get greasy. Brown it well, then drain it thoroughly. To make quesadillas that are crispy and nicely browned, you have to get rid of excess fat and liquid.
