No extra dishes to wash and a cheesy, meaty rice casserole for dinner sounds great, doesn’t it? Mexican spices like cumin, coriander, and chili powder make it extra flavorful.

Ingredients for Mexican Ground Beef and Rice Casserole

  • Olive oil will be used for sauteing the onion, garlic, and bell pepper. Use light olive oil, not extra-virgin.
  • Onion and garlic add depth of flavor.
  • Red bell pepper to give the casserole flavor and a splash of red color.
  • Ground beef. Use lean ground beef if possible. If not, drain the extra fat to reduce calories.
  • Tomato paste to infuse the dish with tomato flavor without adding extra moisture.
  • Rice. Use long-grain white rice for best results.
  • Reduced-sodium chicken broth instead of water to infuse the rice with extra flavor.
  • Corn. You can use canned whole kernel corn, or thawed frozen corn.
  • Canned black beans, drained and rinsed to remove the sediment on the bottom of the can.
  • Cumin, coriander, chili powder, paprika, and parsley flakes add that Mexican touch and authentic flavor.
  • Shredded cheddar cheese. It’s always recommended to shred your own cheese for maximum melting capacity.
  • Salt and pepper. Always add them with discretion and to taste.
  • Sliced green onions for garnish.

How to Make Mexican Ground Beef and Rice Casserole

    1. Saute the onion, garlic, and bell pepper in olive oil in a large skillet over medium-high heat until tender.

    2. Add the ground beef and cook until brown, about 5 minutes. Drain the excess fat if needed.

    3. Mix in the black beans and corn.

    4. Stir in the tomato paste, cumin, coriander, chili powder, paprika, parsley flakes, salt, and pepper until well combined.

     5. Add the rice and chicken broth. Bring to a boil, reduce the heat, and simmer, with the lid on, for 15 minutes stirring occasionally, until the rice is fully cooked. If it runs out of liquid and the rice is not fully cooked, add a splash more of chicken broth.

    6. Remove from heat and stir in half the shredded cheese until melted.

    7. Sprinkle the remaining cheese and sliced green onions evenly on top, place the lid on so the cheese melts, and serve.

Ingredients

  • 1 ½ tbsp olive oil
  • 1 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, finely chopped
  • 1 lb ground beef
  • 1- 14 oz can whole kernel, drained
  • 1- 14 oz can black beans, drained and rinsed
  • 5 tbsp tomato paste
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp parsley flakes
  • 1 ¼ cup long-grain white rice
  • 2 ½ cups reduced-sodium chicken broth
  • 1 ½ cups cheddar cheese, shredded
  • 4 green onions, sliced

Instructions
