Frequently Asked Questions
Why are they called Magic Bars?
They’re called “magic” because of how easy they are to make (no mixing!) and because the sweetened condensed milk magically binds all the layers together as it bakes and caramelizes.
Can I use salted butter?
Yes, but reduce or omit the flaky salt topping to avoid oversalting. Unsalted butter gives you better control over the final salt level.
My bars are too gooey – what went wrong?
The bars need to cool completely to set properly. If they’re still too soft after cooling, refrigerate for 2-3 hours. Also make sure you used sweetened condensed milk (not evaporated milk) and baked until the coconut was golden.
Can I make these gluten-free?
Absolutely! Use gluten-free graham crackers for the crust. Everything else is naturally gluten-free.
How do I know when they’re done baking?
The coconut should be lightly golden brown and the edges should look set. The center might still jiggle slightly – that’s okay! They’ll firm up as they cool.
Can I double this recipe?
Yes! Use a larger pan (like a half-sheet pan) or make two 9×13 pans. Baking time should remain about the same – just watch for the coconut to turn golden.
