How to Make Alice Springs Chicken

Ingredients for Alice Springs Chicken

    1. Make the marinade: in a small bowl, whisk together the Dijon mustard, honey, mayo, garlic, red pepper flakes, and dry minced onion.

    2. Place the chicken breasts in a large bowl or ziploc bag and pour ½ cup of the marinade over the chicken. Toss to combine and marinade for 20-30 minutes in the refrigerator. Save the rest for later.

    3. Cook the bacon in a large skillet until crispy and transfer to a plate lined with a paper towel. Wipe the skillet clean.

    4. Melt the butter in the same skillet and brown the sliced mushrooms for 7-10 minutes. Transfer to a bowl.

    5. Preheat the oven to 375 F.

    6. Season the chicken breasts with salt and pepper. In the same skillet, heat the olive oil over medium-high heat and brown the chicken breasts for 4 minutes on each side (you don’t have to cook the chicken all the way through).

    7. Divide the mushrooms evenly over the chicken breasts, place the cooked bacon over the mushrooms, and top with the shredded cheese.

    8. Spoon the reserved sauce into the skillet and bake for 15 minutes or until the chicken breasts are cooked through.

You can cook the recipe up until baking chicken with the mushrooms, bacon, and sauce but don’t add the cheese. Let the chicken cool down completely and freeze in an airtight container for up to 3 months. When ready to serve, thaw in the refrigerator overnight, place in a baking dish (chicken and sauce), sprinkle the cheese on top, and reheat in a 350 F oven until the cheese is melted.
