  • 1 cup onion, chopped
  • 1 jalapeno, diced and seeds removed (don’t remove them if you like it spicy)
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 2 tsp chili powder
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • 4 cups chicken broth
  • 1 cup sour cream
  • ½ cup shredded Mexican cheese blend
  • 2 cups frozen white corn
  • ½ cup fresh cilantro, chopped
  • Juice of one lime
  • 1 tsp salt and black pepper to taste

  • ¼ cup water
