Ingredients for Sausage Cranberry Brie Bites
- Frozen puff pastry
- Ground Italian sausage
- Jellied cranberry sauce
- Brie cheese
- Fresh sage
- Fresh rosemary
- Egg
How to Make Sausage Cranberry Brie Bites Recipe
1. Line two baking sheets with parchment paper and preheat the oven to 400 F.
2. Cook the sausage in a large skillet over medium-high heat until fully cooked, about 4-5 minutes.
3. Mix in the freshly chopped rosemary and sage. Drain the extra fat if necessary.
4. Unroll the puff pastry sheet and brush it with egg wash.
5. Spread the jellied cranberry sauce over the puff pastry sheet, leaving a 1/2 inch border on all four sides.
6. Sprinkle the cooked sausage over the cranberry sauce.
7. Place the cheese slices over the sausage (evenly spaced) and roll up the pastry sheet as tightly as you can, with the cheese slices horizontally as you roll, to make a log.
8. Cut the roll into 12- 1-inch slices using a sharp knife and place them on the baking sheet.
9. Brush the top and sides of the slices with egg wash and bake for 15 minutes or until brown.
Can I Make Sausage, Cranberry, and Brie Bites Ahead of Time?
These bites take just 15 minutes to bake, but you can cook the sausage ahead of time and store it in an airtight container for up to 3 days. Thaw out the puff pastry 40 minutes before baking, make the roll, and bake the slices just prior to serving. Making and baking the rolls will take about 20 minutes if you cook the sausage ahead of time.

Yes, you can freeze these bites for up to 3 months. Bake them and let them cool down completely. Store them in an airtight container or freezer bag, and freeze. Let them thaw in the refrigerator overnight before reheating them in a 400 F oven or toaster oven for 10 minutes or until warmed through.
