Tomato Pie is a perfect recipe to serve as part of a brunch buffet. Its creamy and cheesy top compliments the tender, flavorful tomato filling.

Ripe tomatoes, fragrant garlic and basil, fresh green onions, and a mixture of cheeses makes this an irresistible summer meal!

Ingredients for the Best Tomato Pie

  • Refrigerated pie crust
  • Ripe slicing tomatoes
  • Fresh basil leaves
  • Green onions
  • Garlic
  • Italian seasoning
  • Onion powder
  • Salt
  • Pepper
  • Shredded mozzarella
  • Shredded cheddar
  • Mayonnaise
  • Greek yogurt

How to Make the Best Tomato Pie

    1. Preheat the oven to 375 F.

    2. Prepare the tomatoes: place two layers of paper towels on a baking sheet. Place the tomato slices on top of the paper towels. Sprinkle one tsp of salt evenly over the tomato slices. Let them rest for 15 mins to draw out moisture from them. Once the 15 minutes are over, pat them dry with a paper towel. This will prevent the pie from being watery.

    3. Carefully place the pie crust on a pie dish. Crimp the edges and poke holes in the bottom using a fork.

    4. Bake the pie crust for 10 mins.

    5. In a small bowl, combine the chopped basil, sliced green onions, and onion powder.

    6. In a large bowl, combine the shredded mozzarella, shredded cheddar, mayonnaise, Greek yogurt, and Italian seasoning.

    7. Remove the crust from the oven and place a layer of tomatoes on top of the crust.

    8. Sprinkle half the basil mixture over the tomatoes. Repeat with the remaining tomatoes and basil mixture.

    9. Spread the cheese mixture evenly over the tomatoes and basil, and bake for 30 minutes or until the cheeses are melted and slightly brown.

How to Store Tomato Pie?

If you have any leftovers, let them come to room temperature, and place them in an airtight container. Refrigerate for up to 3 days. You can reheat them in the toaster oven or oven until warmed through.

Can I Freeze Tomato Pie?

It is not recommended to freeze this pie. Tomatoes have a high moisture content and will make the crust soggy when thawed. It is best to bake and serve this pie immediately.
