    1. Make the rub by combining the herbs and spices. Sprinkle over the beef cubes and massage until well coated. Sprinkle the flour over the cubes, and toss to coat as well.

    2. Heat the olive oil in a large skillet over medium-high heat and brown the meat cubes for about 30 seconds on each side, working in batches. Transfer to a plate and keep warm. You don’t need to cook the beef all the way through.

    3. Deglaze the skillet by adding the red wine and scraping the bottom to remove all the bits and pieces stuck to it.

    4. Bring the wine to a boil, reduce the heat, and simmer until reduced by half.

    5. Add the butter, onions, and garlic, and cook until the onions are translucent.

    6. Pour in the beef broth, Italian seasoning, parsley flakes, garlic powder, onion powder, salt, and pepper. Bring to a boil.

    7. Make a cornstarch slurry by combining the cornstarch with 3 tbsp cold water, and pour into the sauce. Whisk until thickened.

    8. Return the beef cubes (along with any juices)  to the skillet, cover, and cook for 10 minutes or until the beef is fully cooked. Serve over mashed potatoes, or freshly cooked rice.

What Cuts of Beef Can I Use to Make Beef Tips & Gravy?

You can use boneless beef chuck roast, stewing beef (although it might be a bit tough so it’s best cooked in the slow cooker), flank steak, or tenderloin if budget is not the problem. The key is to cut the meat roughly the same size, so all the cubes cook evenly.
