With an easy-to-make shortbread-style crust that is used also as a topping, a no-mixer needed filling, and frozen blueberries, these bars will be your favorite go-to dessert!

Ingredients for Blueberry Pie Bars

  • Unsalted butter
  • Granulated sugar
  • Brown sugar
  • All-purpose flour
  • Salt
  • Egg
  • Green yogurt
  • Vanilla extract
  • Frozen blueberries (or fresh)
  • Lemon juice
  • Lemon zest
  • Cornstarch

How to Make Blueberry Pie Bars

Ingredients for Blueberry Pie Bars

    1. Line an 8×8-inch baking dish with parchment paper, and preheat the oven to 350 F.

    2. Make the crust and topping:

  • In a medium-sized bowl, melt the butter in the microwave
  • Whisk in the sugar
  • Stir in the flour and salt (the mixture will be dry and sandy).
  • Reserve ¾ cup of mixture to use later as the topping, and press the rest into the bottom of the baking dish to make the crust.

    3. Make the filling:

  • Whisk together the egg, Greek yogurt, sugar, flour, and vanilla in a medium-sized bowl until well combined.
  • Pour evenly over the crust (jiggle the pan to distribute it evenly).

    4. Make the Blueberry layer:

  • In a second medium-sized bowl (you can use the same bowl but wash it first), mix the blueberries with the sugar, lemon juice, lemon zest, and cornstarch.
  • Spoon over the filling making sure to distribute the blueberries evenly.

    5. Sprinkle the reserved crumble topping evenly on top and bake for 55-60 minutes or until the edges are bubbling (the center should be bubbling a little too). The crumble topping should be a pale golden color. Let them cool down completely before slicing them or they will fall apart.

Can I Freeze Blueberry Pie Bars?

Absolutely! Wait until the bars are completely cool, place them on a baking sheet (lined with parchment paper) in a single layer and freeze until solid. Once frozen, wrap them individually with plastic wrap and foil, place in a freezer bag, and freeze for up to 6 months.

Store these bars in an airtight container in the refrigerator if you plan to keep them for more than a couple of days.

Can I Use Fresh Blueberries?

Yes, you can use either fresh or frozen blueberries. Frozen blueberries will produce “juicier” bars, while fresh blueberries will produce more “dry” bars, meaning they will hold their shape easier.

  • 1 ½ cups all-purpose flour
  • Pinch of salt

For the filling:

  • 1 large egg

  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
