Ground beef is a very versatile ingredient that can be used in many recipes other than burgers. This cheesy and hearty Cheeseburger Soup is packed with veggies and protein.

Ingredients for Cheeseburger Soup

  • Ground beef. Always drain the extra fat that results after browning the ground beef to reduce calories and for a healthier soup.
  • Onion, Carrots, and Celery. These three ingredients together are widely used by chefs as a base that provides the best flavor for many recipes.
  • Italian seasoning. Herbs like oregano, basil, rosemary, thyme, parsley, and garlic give the soup a great flavor boost.
  • Butter is used for sauteing the veggies and cooking the flour that will thicken the soup. If you use salted butter, be careful when adding extra salt to the soup.
  • All-purpose flour will thicken the soup.
  • Chicken broth. Using low-sodium chicken broth is a good choice for a healthier soup. It is used as the soup base.
  • Milk adds creaminess to the soup. It is healthier than adding heavy cream, which has a higher fat content.
  • Cheddar cheese or your favorite melty cheese like mozzarella or Monterey Jack for that cheesy final touch.
  • Salt and pepper to season and add flavor. Use them to taste and add them at the end of the cooking time.

How to Make Cheeseburger Soup Recipe

    1. In a large Dutch oven or pot, brown the ground beef over medium-high for 3-4 minutes or until fully cooked. Drain the excess fat and transfer to a bowl.

    2. Melt 1 tbsp of butter in the same pot over medium-high heat and saute the onions, celery, carrots, and Italian seasoning for 2-3 minutes until tender.

    3. Pour in the chicken broth and add the potatoes, and beef to the pot. Bring to a boil, reduce the heat, and simmer for 10 minutes or until the potatoes are tender.

    4. Melt the remaining 3 tbsp in a small skillet and add the flour. Cook until the flour turns a light golden color. Mix this into the soup and bring to a boil. Reduce the heat and simmer for 5 minutes until the soup thickens.

    5. Add the cheese, milk, salt, and pepper. Remove from heat and stir until the cheese melts. Serve with a slice of crusty bread.

  • 1 cup celery, chopped
  • 2 tsp Italian seasoning

  • ¼ cup (4 tbsp) all-purpose flour
  • 1 ½ cups whole milk
  • 2 cups cheddar cheese, shredded
