Making dinner fun is a great way to ensure young children eat and enjoy it. My kids love to make chicken lasagna roll ups with me.
I make the sauce and they like to help make the roll ups! It’s a fun way to make lasagna and everyone gets to eat the rolls they made!
Ingredients for Chicken Lasagna Roll Ups
- Rotisserie chicken
- Butter
- Onion
- Red bell pepper
- Garlic
- Roma tomato
- Italian seasoning
- Flour
- Chicken broth
- Heavy cream
- Shredded mozzarella cheese
- Lasagna noodles
- Fresh basil
How to Make Chicken Lasagna Roll Ups
1. Preheat the oven to 350 F and cook the lasagna noodles according to package instructions. Drain and rinse with cold water.
2. Melt the butter in a large skillet or saucepan and saute the onion, garlic, bell pepper, and roma tomato until tender, about 4 minutes. Sprinkle in the flour and cook for one minute.
3. Slowly whisk in the chicken broth until no lumps remain. Add the Italian seasoning, salt, pepper, and heavy cream. Simmer for 2 minutes until thick.
4. Combine the shredded chicken with 1 ½ cups mozzarella cheese.
5. Spread ½ cup sauce into the bottom of a 9×13-inch baking dish
6. Place a lasagna noodle on your work surface and sprinkle chicken and cheese all over it. Roll it up and place it seam-side down on the baking dish. Continue with the other lasagna noodles.
7. Spoon the sauce over the roll ups and sprinkle the remaining mozzarella cheese on top.
8. Bake for 30 minutes or until the edges are bubbly and the cheese is melted and slightly golden on top.
Can I Freeze Chicken Lasagna Roll Ups?
It is not recommended to freeze dairy-based pasta sauces. These sauces are high in fat and it separates once they thaw. They will not have the same texture. The answer, in my opinion, is no.
Leftovers can be stored in the refrigerator for up to 4 days in an airtight container and reheated in the microwave or in a 350 F oven. This dish yields a good amount of sauce, so make sure you store all the sauce as well. It will ensure the roll ups stay moist when reheated.
What to Serve with Chicken Lasagna Roll Ups
Like all Italian-inspired pasta dishes, these lasagna roll ups pair wonderfully with a side salad and garlic bread.
You can serve it with Caesar salad, or with a simple greens salad with Italian dressing.
