Garlic Butter Tomato Baked Chicken

  • Olive oil
  • White wine vinegar
  • Garlic powder
  • Italian seasoning
  • Parsley flakes
  • Red pepper flakes
  • Boneless, skinless chicken breasts
  • Grape tomatoes
  • Balsamic vinegar
  • Butter
  • Honey
  • Garlic
  • Dried thyme
  • Dried oregano
  • Dried basil
  • Shredded mozzarella

How to Make Garlic Butter Tomato Baked Chicken

    1. In a large bowl, combine the olive oil, white wine vinegar, garlic powder, Italian seasoning, parsley flakes, salt, pepper, and red pepper flakes.

    2. Add the chicken breasts and mix them around until fully covered with the marinade. Cover with plastic wrap and refrigerate for 15 minutes or up to 2 hours.

    3. Preheat the oven to 425 F and place the grape tomatoes in a 9×13-inch baking dish. Drizzle the balsamic vinegar, melted butter, and honey over them, and sprinkle in the thyme and Italian seasoning. Mix everything until well combined.

    4. Move the tomatoes to the edges of the dish and place the marinated chicken breasts in the center. Bake, uncovered, for 20-25 minutes or until fully cooked. If you have a meat thermometer, cook until the internal temperature of the chicken reaches 165 F.

    5. Remove from the oven and sprinkle the shredded cheese over the cooked chicken breasts. Return to the oven and bake until the cheese melts.

This dish is best made fresh. Tomatoes become watery when thawed. You can marinate the chicken breasts the day before and bake when ready to eat.

If you have leftovers, they will keep fresh in the refrigerator for up to 3 days when stored in an airtight container. Reheat them in the microwave.
