Ingredients for Lunch Lady Brownies
- Butter
- Unsweetened cocoa
- Salt
- All-purpose flour
- Sugar
- Large eggs
- Vanilla extract
- Milk
- Powdered sugar
How to Make Lunch Lady Brownies
1. Line a 9×13-inch baking dish with parchment paper (with extra paper hanging on the sides for easy removal), and preheat the oven to 350 F. Spray the parchment paper with cooking spray.
2. Using a hand-held or stand mixer, beat the melted butter and cocoa powder until smooth.
3. Beat in the flour and sugar until crumbly.
4. Mix in the eggs and vanilla extract until just combined (don’t over mix). This batter will be thick.
5. Spoon the batter into the baking dish and spread out evenly. Bake for 25-30 minutes until a toothpick inserted in the middle comes out clean. Remove from the oven and let cool for 15 minutes before frosting.
6. Make the frosting: using a hand-held or stand mixer, beat all frosting ingredients together until smooth.
7. While the brownies are still warm, spread the frosting over them evenly, and let cool down completely before cutting them.
Can I Freeze Lunch Lady Brownies?
Yes, you can! Place the brownies on a baking sheet and freeze until solid. Once solid, you can store them in a freezer bag or airtight container and freeze for up to 4 months. Let them thaw completely before serving.
