Using rotisserie chicken is very convenient when you’re pressed on time. This creamy casserole has bits of stuffing in the filling that bakes to a custardy consistency, the zucchini and mushrooms are firm-tender, and the whole dish tastes amazing!

Ingredients for Rotisserie Chicken & Zucchini Casserole

  • Shredded rotisserie chicken
  • Zucchini
  • Mushrooms
  • Onion
  • Stove Top chicken stuffing mix
  • Butter
  • Cream of chicken soup
  • Sour cream
  • Parsley flakes

How to Make Rotisserie Chicken & Zucchini Casserole

    1. Lightly spray a 9×13-inch baking dish with cooking spray and preheat the oven to 350 F.

    2. Melt the butter in a large bowl and mix with the stuffing mix. Save half of this mixture for the topping.

    3. Mix half the stuffing mixture with the shredded chicken, zucchini, mushrooms, onions, cream of chicken soup, sour cream, and parsley flakes until well combined.

    4. Spoon the mixture into the baking dish and spread evenly. Top with the reserved stuffing mix and bake for 35-45 minutes or until bubbly and golden brown on top.

Yes, you can freeze this casserole before baking. Assemble the casserole completely, wrap twice with plastic wrap and once with foil, and freeze for up to 3 months.

  • 1 cup sour cream
  • ¼ cup milk
