Ingredients for Slow Cooker Ham and Potato Soup

    1. Place the cubed potatoes, chopped onion, sliced carrots, chopped celery, bay leaves, thyme, salt, pepper, and chicken broth in the pot of the slow cooker. Cook on low for 8 hours or on high for 4.

    2. Once the potatoes are soft, mash about ⅓ using a potato masher. Do it in the slow cooker. Don’t worry if you mash a few of the carrots. The ham won’t be harmed, don’t worry.

Can I Freeze Ham and Potato Soup?

This soup does not freeze well. When you freeze potatoes, they become grainy as they thaw, and the fat will separate, changing the texture of the broth as well.

If you want to make this soup ahead of time, you can make it, let it cool down completely, and refrigerate it for up to 3 days.

What to Serve with Ham and Potato Soup?

This soup has protein (ham), veggies (carrots), and carbohydrates (potatoes), so it is a complete meal in itself. You can serve it with a thick slice of toasted bread and a side salad if you want to add a little extra to the meal.
