How to Make Smoked Pork Belly Burnt Ends

Ingredients for Smoked Pork Belly Burnt Ends

With a very sharp knife, trim the fatty top layer or the pork belly and cut it into 1 ½-inch cubes.

Make the rub: in a small bowl, combine the olive oil, brown sugar, salt, pepper, paprika, garlic powder, and onion powder.

Season the pork belly cubes: mix the pork belly cubes with the rub until completely covered on all sides.

Place the pork belly cubes on a wire rack and place the rack on the smoker. Smoke at 250 F for 2 ½ to 3 hours until dark red.

Make the sauce by combining the BBQ sauce, melted butter, honey, and hot sauce in a small bowl and toss the smoked pork belly bites into the sauce until well covered.

Transfer the cubes to a disposable aluminum pan and cover with foil. Return to the smoker and cook for another 60 minutes at 250 F until cooked through (200F-205F internal temperature).

You can make your burn ends in the oven following these instructions:

  • Place a few wood chips into an oven-safe bowl and cover with water
  • Preheat the oven to 400 with the bowl inside. Wait for the water to start boiling and place the seasoned pork belly cubes in a wire rack over a baking sheet.
  • Cook for 25-30 minutes, remove from the oven and toss with the barbecue sauce.
  • Return to the oven and cook for an additional 15 mins until caramelized on the outside and cooked through,
