- Bell peppers: are needed for this recipe. Use any kind you like, whether red, green, orange, or yellow. Just cut off the tops, seeds, and cores before cooking.

How to Make Ground Beef-Stuffed Bell Peppers
1. Cut the top of the bell peppers and core them, removing any seeds and ribs on the inside. Set aside.
2. Preheat the oven to 350 F
3. Brown the ground beef along with the onions and garlic in a large skillet over medium-high heat until no pink is left on the meat.
4. Mix in the celery, corn, diced tomatoes with juice, crushed tomatoes, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper to taste. Bring to a boil, reduce the heat, and simmer for 10 minutes.
5. Mix in the cooked white rice until well combined.
6. Stuff the bell peppers with the meat and rice mixture, and place them in a 7×11-inch baking dish. Sprinkle the shredded cheese on top.

- ⅓ cup onion, finely chopped
- 2 garlic cloves, minced
- 1 cup celery, finely chopped
- 1 ½ cup frozen corn
- 1 (14.5 oz) can petite diced tomatoes, with juice
- ½ cup crushed tomatoes
- 2 tbsp tomato paste
- 2 tsp Italian seasoning
- 1 tsp dry parsley flakes
- ½ tsp red pepper flakes
- 1 tsp salt or to taste
- Ground black pepper to taste
- 1 ½ cups cooked white rice (your favorite)
- 1 cup shredded Colby Jack cheese
- Chopped parsley for garnish
