INGREDIENTS FOR HEALTHY STUFFED PEPPERS
- Bell peppers: 7 bell peppers are needed for this recipe. Use any kind you like, whether red, green, orange, or yellow. Just cut off the tops, seeds, and cores before cooking.
- Cheese: Grated cheddar to add that cheesiness and flavor. You can add any kind you like.
- Parsley: It’s used for decoration when serving. This adds freshness to your stuffed bell peppers.
HOW TO MAKE THIS STUFFED PEPPERS RECIPE
1. Prep your bell peppers: Slice the tops off of your bell peppers, and wash out the seeds. Put them skin side down on your baking dish. Put that to the side, turn on your oven to 375 F, and start making your beef filling.
2. Cook your beef: Put a frying pan over medium heat and pour in your vegetable oil. Mix in your tomatoes, any vegetables you want, and all the spices. Add in cooked rice if you want. You can make this as low in carbs as you’d like.
3. Boil your tomato sauce: Let simmer until it’s thicker. Then add in your salt and pepper for seasoning.
4. Stuff your peppers: Now, fill up your peppers with your cooked beef. Shred your cheese in case you’re shredding it at home.
5. Bake the peppers: Bake your peppers for 10 to 12 minutes. Take them out of the over, top them with your grated cheese, and cook for another 5 to 7 minutes. Sprinkle parsley over them and serve!

Ingredients
- 2 tablespoons of extra-virgin olive oil
- 1 chopped onion
- 3 chopped garlic cloves
- 1 pound of ground beef
- 1 and ½ cups of cooked brown rice
- A 14.5 ounces can of diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon of dried oregano
- 1 tablespoon of smoked paprika
- Kosher salt and pepper, to your liking
- 7 big bell peppers with core and top cut off
- 1 cup of grated cheddar jack cheese
- Minced parsley to decorate
Instructions
- Turn on your oven to 375 F and put your peppers face up in a baking dish.
- Put a frying pan over medium heat and pour in your vegetable oil. Sear in your onions until soft, add in your garlic, and cook for 1 minute.
- Place in your ground beef and cook for 5 to 6 minutes, separating your meat using a wooden spoon. Mix in your diced tomatoes, tomato paste, cooked brown rice, smoked paprika, and oregano.
- Let simmer for 4 to 5 minutes until your sauce goes down a bit. Give it a taste before adding salt and pepper.
- Fill up each pepper with your beef mix and cook in your oven for 10 to 12 minutes until soft.
- Put the cheese over your peppers and cook for another 5 to 7 minutes. Sprinkle parsley over them and serve!
Notes
- Quinoa can be used instead of rice. If you want to cut down on carbs, use cauliflower rice.
- If the paprika is too much for you, only use 2 teaspoons.
- Ground beef can be substituted for ground turkey.
- Any oil such as cooking oil can be used instead of olive oil.
- Any fat-free or light grated cheese can be used.
