- Milk
- Eggs

How to Make Yellow Squash Casserole
1. Grease a 7×11 or a 9×9-inch baking dish and preheat the oven to 400 F.
2. Heat the olive oil in a large skillet over medium-high heat and saute the onions and garlic until translucent, about 3 minutes.
3. Reduce the heat to medium-low, and place the squash slices over the onions and garlic. Pour ¼ cup water into the skillet, place the lid on, and let the squash steam until tender, about 5-7 minutes.
4. Mix the crushed cracked and cheddar cheese in a medium-sized bowl and save half in a smaller bowl for topping.
5. To the medium-sized bowl add the milk, eggs, melted butter, parsley, Italian seasoning, salt, and pepper.
6. Add the cooked squash and onion to the cracker mixture and mix gently until well combined.
7. Pour into the baking dish, sprinkle with the saved cracker/cheese mixture, and bake for 25-30 minutes until lightly golden and bubbly.
Can I Freeze Yellow Squash Casserole?
Yes, you can. Let the cooked casserole cool down completely before wrapping it twice with plastic wrap and once with foil. Freeze for up to 3 months. To reheat, let the casserole thaw overnight in the refrigerator and then bake at 350 F for 20 to 25 mins. The topping might not be as crispy, but it will still be delicious.
