  • Caster sugar.

  • Sour cream
  • Fresh lemon zest (optional)

How to Make Easy Air Fryer Creamy Cheesecake

To prepare the cracker crumb crust, you must combine the crushed cracker crumbs with the melted butter and mix until evenly combined. Pour the mixture into the bottom of the springform pan and press the crumbs down into the base and up the sides using the bottom of a measuring cup. Meanwhile, preheat the air fryer. Place the crust onto an air fryer basket or tray and air fry until golden brown.

To make the filling, in a bowl of an electric mixer, beat the cream cheese on low-medium speed until fluffy. Then, add the flour and sugar and continue to beat slowly until combined. Add the eggs and continue beating after each addition. Scrape the sides of the bowl, then add the vanilla extract, sour cream, and lemon zest. Beat until creamy.

Put the pan with the crust into the air fryer, then pour the filling over the crust and smooth the top with a spatula. Close the air fryer lid and turn the air fryer setting to bake.

Check if the top is firm to the touch and the center jiggles slightly.

Carefully remove the springform pan from the air fryer, let it sit at room temperature for about 1 hour, and then place it to cool in the fridge.

Top the cheesecake with berry sauce or any other fruit sauce, powdered sugar, and a dollop of whipped cream.

Can I Make the Easy Air Fryer Cheesecake Recipe Low-Carb and Keto-Friendly

You can use almond flour  as a substitute for flour.

You can use any granulated sweetener of your choice as a substitute for caster sugar.

Recipe Tips:

  • Air Fryers are different from ovens, so you need to adjust the cooking time depending on your air fryer model. when the cooking time is finished, if the cheesecake is not baked,  mostly set with a slight jiggle in the middle, add a few minutes to the cooking time.
  • If the cheesecake is becoming brown too quickly you can also reduce the temperature and bake for a little bit longer.
  • When baking time is finished, allow the cheesecake to cool in the Air Fryer basket to avoid cracks.
  • You can keep any leftovers in the fridge for up to three days.

Ingredients

  • FOR THE CRUST
  • 200 g (7oz) graham cracker crumbs or crushed cookies
  • 60 g (2.5oz) unsalted butter melted
  • FOR THE FILLING
  • 500 g (1lb) plain cream cheese at room temperature ( we used Philadelphia)
  • 125 g (1/2) caster sugar
  • 3 tablespoons (25g) all-purpose flour
  • zest of 1 lemon
  • 2 large eggs
  • 125 ml of sour cream (1/2 cup)
  • 1 teaspoon pure vanilla extract

Instructions

  1. PREPARATION OF THE CRACKER CRUMB CRUST:
  2. Combine the crushed cookie crumbs with the melted butter and mix until evenly combined.
  3. Pour the mixture into the bottom of the springform pan and press the crumbs down into the base and up the sides using the bottom of a measuring cup.
  4. Preheat the air fryer to 350F/175C for 3 minutes.
    Place onto air fryer basket or tray and air fry for 5 minutes until golden brown.
  5. FOR THE FILLING:
  6. In a bowl of an electric mixer, beat the cream cheese on low-medium speed until fluffy for 2 minutes.
  7. Add the flour and sugar and continue to beat slowly until combined.
  8. Add the eggs ( one at a time) increase the speed to medium, and continue beating after each addition.
  9. Scrape the sides of the bowl, then add the vanilla extract, sour cream, and lemon zest. beat for another minute until creamy.
  10. Put the pan with the crust into the air fryer, then pour the filling over the crust and smooth the top with a spatula.
  11. Close the air fryer lid and turn the air fryer setting to bake at 170ºC/340ºF for 10 minutes then turn the temperature down to 110ºC/230ºF and continue cooking for a further 20-30 minutes.
  12. Check, if the top is firm to the touch and the center, jiggles slightly.
  13. Carefully remove the springform pan from the air fryer, let it sit at room temperature for about 1 hour, and then transfer it to cool in the refrigerator for at least 8 hours.
  14. Top the cheesecake with berry sauce or any other fruit sauce, powdered sugar, and a dollop of whipped cream.
