  • Prep your chicken first by washing it and tapping in with a paper towel to dry which will allow the mayonnaise to cling onto it.
  • Combine your mayo with salt, onion powder, garlic, garlic powder, and Italian seasoning. Separate the mix to spread on both sides of each fillet.
  • Mix the parmesan and panko breadcrumbs in a plate or shallow dish.
  • Coat your chicken in the breadcrumb mix and tap it in. Meanwhile, turn on your air fryer to 390 F, grease your basket in olive oil, and place your chicken to cook on each side for 4 to 6 minutes.

Ingredients

  • 2 chicken breasts without skin and bone, cut horizontally into 4 fillets.
  • 1 tablespoon parsley or oregano to decorate.

The Garlic Mayounnaise

  • ¼ cup of mayonnaise
  • 2 chopped garlic cloves
  • ½ teaspoon of onion powder
  • 1 teaspoon of Italian seasoning
  • ½ teaspoon of garlic powder
  • Salt to your liking

The Parmesan Coating

  • 1 cup of shredded parmesan
  • ½ cup of panko breadcrumbs

Instructions

  1. Turn on your air fryer to 199°C/ 390°F
  2. Cut 4 fillets out of your chicken breasts.
  3. Transfer to a cutting boarding, top with plastic, and use a meat tenderizer or rolling pin to smack it into a smooth layer.
  4. Combine your mayo with salt, onion powder, garlic, garlic powder, and Italian seasoning. Separate the mix to spread on both sides of each fillet.
  5. In a plate or shallow dish, stir your parmesan and panko breadcrumbs together. Coat your chicken in the mix, pat it in carefully using your tongs. Repeat for the other side. Tap on anything extra.
  6. Transfer your fillets to the air fryer to cook for 10 to 12 minutes, the core temperature should be at 165 F. Turn your chicken pieces over after 5 to minutes to cook evenly.
  7. Top with parsley or oregano. Serve!
