One of the best chocolate cakes I’ve made, it’s surprisingly simple despite its layered appearance. Made with cocoa powder, it’s easy to whip up for your family. Just mix the ingredients, bake the layers, prepare the frosting, and assemble. Everyone will love its soft, airy texture.

What makes this cake so moist?

The secret to its moisture lies in the use of vegetable oil, buttermilk, and a cup of coffee.

Substitutions and Additions:

  • Use 1 cup of sour milk in place of buttermilk.
  • Opt for a 12-cup Bundt pan or a 9×13-inch baking pan, adjusting baking time as needed.
  • Top with any frosting you like.

How to Store Hershey’s Black Magic Cake

Keep any leftover cake fresh by storing it in an airtight container in the fridge. It’ll stay good for up to 7 days.

If you want to keep it longer, you can also freeze the cake for up to 3 months. I recommend flash-freezing it first, just leave it uncovered in the freezer for a bit — before wrapping it up. You can either wrap the whole cake in plastic wrap and place it in an airtight container, or wrap individual slices instead. Wrapping slices separately makes it super easy to grab just one or two pieces later without having to thaw the entire cake.

Flash-freezing first really helps prevent the ganache from sticking to the plastic wrap.

Ingredients

Cake:

  • 2 cups granulated sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs (room temperature)
  • 1 cup buttermilk
  • 1 cup strong coffee
  • ½ cup vegetable oil
  • 1 ½ tsp vanilla extract

Chocolate Cream Cheese Frosting:

  • 4 oz cream cheese (softened)
  • 4 tbsp unsalted butter (softened)
  • 1 tsp vanilla extract
  • 8 oz powdered sugar
  • ¼ cup unsweetened cocoa
  • A pinch of salt

Chocolate Frosting:

  • 3 tbsp unsalted butter
  • 3 tbsp unsweetened cocoa
  • 1 tbsp warm water
  • 1 tbsp coffee-flavored liqueur
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F. Grease and line two 9-inch round pans.
  2. Mix dry ingredients: sugar, flour, cocoa, baking powder, baking soda, and salt. Create a well in the center.
  3. In another bowl, whisk eggs, buttermilk, coffee, oil, and vanilla. Pour into dry ingredients and beat until smooth.
  4. Divide batter into pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  5. Cool in pans for 10-15 minutes, then transfer to a rack to cool completely.
  6. For cream cheese frosting, beat cream cheese, butter, and vanilla. Add powdered sugar, cocoa, and salt. Spread on the bottom cake layer, top with another layer.
  7. For chocolate frosting, melt butter in a saucepan. Stir in cocoa, water, and liqueur. Remove from heat, beat in powdered sugar. Add water if needed. Frost the cake, let set, slice, and enjoy!

Absolutely loved it! I stored it in an airtight container in the fridge, and it stayed fresh all week. I also froze a few slices, flash froze them first so the ganache didn’t stick. Worked perfectly! Just let them thaw before serving. 10/10, will definitely make it again.
