Whoever had the idea to bake a cakes in a mug is a genius. Mug cake is the best invention for people who want an easy, fast and single serving dessert. It’s foolproof and ready in just 90 seconds. Can you think of anything better? An easy vanilla mug cake is just what you need to satisfy your last-minute cravings.

INGREDIENTS:

All the ingredients you need to create this delicious single serve masterpiece are pantry staples.

  • All-purpose flour. You can use half all-purpose and half whole wheat for a healthier dessert.
  • White sugar or your sweetener of choice. Monk Fruit sweetener is a great option for a low calorie version.
  • Baking powder. ¼ teaspoon is all you need.
  • Pinch of salt. All desserts need a pinch of salt to enhance their flavor.
  • I use 2%, but you can use whole milk, skim milk, oat, soy, almond, or your milk of choice.
  • In my opinion, nothing makes desserts taste quite like butter, but you can use coconut oil or margarine as the vegan option.
  • Always use good quality pure vanilla extract. The cheaper ones have a strong alcohol taste. 
  • Chocolate chips or sprinkles.

HOW TO MAKE VANILLA MUG CAKE

It is literally as easy as one, two, three:

     1. Add the dry ingredients to the mug (flour, sugar, baking powder and salt).

     2. Mix in the wet ingredients (milk, melted butter, vanilla extract). Mix until the batter is smooth and make sure you scrape the bottom of the mug.

     3. Stir in the chocolate chips or sprinkles and microwave for 70-90 seconds depending on your microwave. Start with 70 seconds, let the mug sit inside the microwave for a minute before opening the oven. Insert a toothpick. If it is still undercooked, microwave for 15-20 seconds more and let it sit in the microwave for one minute before opening the oven.

VARIATIONS:

     1. Chocolate mug cakes: Instead of adding vanilla extract, add 1 teaspoon cocoa powder

     2. Lemon mug cake: Add a teaspoon of lemon juice and a teaspoon of lemon pudding to the batter.

     3. Berry flavored: Mix in a tablespoon of your favorite berry jam into the batter.

     4. Cinnamon roll mug cake. Use brown sugar instead of granulated sugar and add ¼ teaspoon of cinnamon (also, sprinkle a little cinnamon sugar on top before baking).

     5. Smores chocolate mug cake: Make chocolate mug cake and place a large marshmallow on top of the mug before microwaving the cakes.

     6. Banana mug cake. Add a mashed banana, reduce flour to 3 tablespoons, add one egg, reduce butter to one tablespoon, and use ½ teaspoon baking powder.

     7. Chocolate peanut butter mug cake. Make chocolate mug cake and mix in 1 teaspoon peanut butter.

     8. Biscoff mug cakes. Make the vanilla mug cake recipe and mix in 2 tablespoons Biscoff spread plus one egg.

CAN I MAKE VEGAN VANILLA MUG CAKE?

Yes you can. Use this recipe for vanilla mug cakes, but instead of using regular milk, use oat, almond, soy, or your vegan milk of choice. Also, substitute butter for the same quantity of coconut oil. Use sprinkles instead of chocolate chips if desired.

Vanilla Mug Cake. A super easy, moist and delicious vanilla cake in a mug that takes only 5 minutes! You can serve with vanilla ice cream or another flavor of your choice !

Ingredients

  • ¼ cup + 1 ½ teaspoons of all-purpose flour
  • 1 ½ tablespoons granulated sugar
  • ¼ teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons butter, melted
  • 3 tablespoons milk
  • ½ teaspoon vanilla extract
  • ½ tablespoon chocolate chips or 1 teaspoon sprinkles

Instructions

  1. Add flour, sugar, baking powder and salt to your mug.
  2. Pour in the milk, melted butter and vanilla extract and mix until the batter is smooth. Make sure to scrape the bottom of the mug to mix everything well.
  3. Blend in the chocolate chips and microwave 70-90 seconds. Start with 70 and if your cake is still slightly uncooked (insert a toothpick), add 20 seconds more. The top of the cake should still be a bit shiny. Let the cake sit in the microwave for one minute before taking it out.
