You won’t find any better, not in the store or anywhere else. Made with both white and brown sugar, rich flavor that is elevated by butter while corn syrup and evaporated milk make you feel them melting in your mouth.

What You’ll Need

  • Butter : butter with no salt as you’ll already use salt in the recipe
  • Sugar : All brown sugar would result in butterscotch so it’s recommended to use equal parts granulated white and brown sugar in the caramels.
  • Corn syrup : light corn syrup to help keep the caramels soft. Dark corn syrup has more of a molasses flavor
  • Evaporated milk : The most important ingredient in making caramel.
  • Salt : to help balance out the sweetness.
  • Vanilla extract : to add a light flavor to the caramel.

How to Make Homemade Caramels

  • In a boil, heat butter, sugars, corn syrup, and salt over medium heat until it starts boiling while stirring constantly.
  • Slowly add in the evaporated milk, a little at a time to make sure it boils continuously. on a candy thermometer , stir constantly for 10 to 15 minutes until it reaches 238F . Add the vanilla in after removing from heat.
  • Let it cool. Transfer the mixture to a pan lined with parchment or baking paper. Put in the fridge and let it cool for at least 30 minutes.
  • Take the caramel out of the pan. Cut into equal squares and enjoy it.

How Can I Tell When Caramel Is Done?

It’s simple ! You can tell by dropping a small amount of caramel into a cup of ice water and if you can  mold it without difficulty into a pliable ball with your fingers, then it’s good to go.

I recommend using a candy thermometer to check that the temperature is 238F and then test it to confirm it’s ready by using the ice water.

Ingredients

  • 1/2 cup of unsalted butter
  • 1 cup of granulated sugar
  • 1 cup of brown sugar
  • 1 cup of light corn syrup
  • 12 ounces can evaporated milk
  • 1 teaspoon of kosher salt
  • 1/2 teaspoon of vanilla extract

Instructions

  1. Line an 8×8 baking pan with parchment or baking paper, hanging over the sides just a bit.
  2. In a saucepan, heat butter, sugars, corn syrup, and salt over medium heat until it starts boiling while stirring constantly for about 8 minutes.
  3. Slowly add in the evaporated milk, a little at a time to make sure it boils continuously. on a candy thermometer , stir constantly for 10 to 15 minutes until it reaches 238F . Add the vanilla in after removing from heat .
