Easy Homemade Caramels

You won’t find any better, not in the store or anywhere else. Made with both white and brown sugar, rich flavor that is elevated by butter while corn syrup and evaporated milk make you feel them melting in your mouth.

What You’ll Need

  • Butter : butter with no salt as you’ll already use salt in the recipe
  • Sugar : All brown sugar would result in butterscotch so it’s recommended to use equal parts granulated white and brown sugar in the caramels.
  • Corn syrup : light corn syrup to help keep the caramels soft. Dark corn syrup has more of a molasses flavor
  • Evaporated milk : The most important ingredient in making caramel.
  • Salt : to help balance out the sweetness.
  • Vanilla extract : to add a light flavor to the caramel.

How Can I Tell When Caramel Is Done?

It’s simple ! You can tell by dropping a small amount of caramel into a cup of ice water and if you can  mold it without difficulty into a pliable ball with your fingers, then it’s good to go.

I recommend using a candy thermometer to check that the temperature is 238F and then test it to confirm it’s ready by using the ice water.

How to Store

whether you’ll be keeping them or giving them as gifts, you want to wrap each homemade caramel individually. It helps to prevent them from drying out and sticking together.

You can store them in the fridge for 6 to 9 months or you can also store them at room temperature for the same amount of time, and make sure to keep them away from the sun and moisture.
