How to Make the Best White Chicken Chili
1. Heat the oil in a large Dutch oven or pot, and saute the chopped onion and jalapeno until soft and translucent, about 3 minutes.
2. Stir in the garlic and spices (oregano, chili powder, cumin, coriander, and red pepper flakes) and cook for 30 seconds until fragrant.
3. Pour in the chicken broth and add the chicken breasts. Bring to a boil, reduce the heat, and simmer, covered, for 15 mins or until the chicken is fully cooked.

- 1 cup onion, chopped
- 1 jalapeno, diced and seeds removed (don’t remove them if you like it spicy)
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 2 tsp chili powder
- ½ tsp ground coriander
- ½ tsp ground cumin
- 4 cups chicken broth
- 1 cup sour cream
- ½ cup shredded Mexican cheese blend
- 2 cups frozen white corn
- ½ cup fresh cilantro, chopped
- Juice of one lime
- 1 tsp salt and black pepper to taste
- 3 tbsp cornstarch
- ¼ cup water
Toppings:
- sliced avocado, crumbled cotija cheese, fresh cilantro
