How to Make Pork Loin Roast with Vegetables
1. Make the spice rub: in a small bowl, combine the paprika, garlic powder, onion powder, dried thyme, dried parsley, dried rosemary, mustard powder, salt, and pepper. Use this rub to coat the entire pork loin.
2. Brown the roast: heat the olive oil in a large heavy-bottomed skillet and brown the pork loin on all sides.
3. Make the glaze: whisk together the garlic, honey, soy sauce, mustard, red pepper flakes, and oil in a bowl until well combined. Reserve 2 tbsp for the veggies.
4. Place the pork loin in a parchment paper-lined baking sheet and brush with the glaze on all sides. Bake for 20 minutes.
5. Place the veggies in a large bowl and toss with the saved glaze.
6. Remove the loin from the oven and place the veggies around it. Bake for an additional 20 minutes or until the internal temperature of the meat reaches 145 F. Pork should be fully cooked. Let the roast rest for 10 minutes before slicing.
Can I Freeze Roasted Pork Loin with Vegetables?
Yes, you can freeze cooked pork loin and vegetables. Let the pork loin cool down completely and place in a freezer bag whole, don’t slice it. The veggies should be stored in a different bag. Freeze for up to 3 months. When ready to serve, let thaw in the refrigerator overnight, then on the counter for 30 minutes. Reheat in a preheated 350 F oven in a baking dish covered with foil. Place the veggies around the loin and reheat together.
