  • Unsalted butter
  • Sugar
  • Eggs
  • Sour cream
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Cinnamon
  • Ripe bananas
  • Cream cheese
  • Powdered sugar
  • Heavy cream
  • Chopped walnuts

How to Make Banana Bread Cake with Cream Cheese Frosting

Ingredients for Banana Bread Cake with Cream Cheese Frosting

    1. Make the cake: grease and flour a 9×13-inch baking dish and preheat the oven to 350 F.

    2. In a large bowl, using a stand or hand-held mixer with the paddle attachment, cream together the butter and sugar until fluffy. It is important that the butter be at room temperature.

    3. Beat in the eggs, sour cream, vanilla, and cinnamon until smooth and creamy.

    4. Add the flour, baking soda, and salt and beat on low until well combined.

 

    5. Slowly fold in the mashed bananas until well incorporated.

    6. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until golden brown and a toothpick inserted in the middle comes out clean. Let the cake cool down completely.

    7. Make the frosting: once the cake is completely cool, beat the cream cheese, vanilla extract, and butter until smooth.

    8. Mix in the powdered sugar and heavy cream until well combined and smooth.

    9. Spread over the cooled cake and sprinkle the chopped walnuts on top. You can also decorate the cake with  slices of fresh banana if serving immediately.

Can I Freeze Banana Bread Cake?

Yes, you can freeze the cooled down cake, but without the frosting. Once the cake is cold, wrap twice with plastic wrap and once with foil, and freeze for up to three months. Once ready to serve, let the cake thaw out completely, and top with the freshly made frosting.

This cake should be stored in the refrigerator because the cream cheese frosting can’t stay out at room temperature for more than a day. Remember to wrap it or place any leftovers in an airtight container so they stay moist.

Topping Suggestions for Banana Bread Cake with Cream Cheese Frosting 

You can top this cake with chopped nuts like pecans, pistachios, or walnuts.

Shaved chocolate is also a good topping for this cake. Fresh slices of banana look beautiful but can be used only if serving the cake immediately because they turn brown with time.

You can also mix dried fruits and nuts into the batter. About ½ cup.
