What do you need to Make this Cucumber Tomato Onion Salad

  • Cucumber: Any kind of cucumber (Persian, mini cucumber…) will work for this fresh salad. Our favorite ones are English cucumbers are much sweeter than others, and are seedless.
  • Tomatoes: You can use any ripe, juicy tomato, such as cherry tomatoes, grape tomatoes, beef tomatoes, heirloom tomatoes, and so on.
  • Red onion
  • Dried oregano or Fresh herbs: fresh Dill, Chives, and basil are all so delicious with cucumber. you can replace it with all the fresh or dried herbs you prefer.
  • Extra-virgin olive oil.
  • Fresh lemon juice.
  • Salt and black pepper to taste.

How to Make easy fresh Cucumber Tomato Onion Salad

Basically, this salad really doesn’t need too much, a simple dressing allows the flavor of the veggies to shine and keeps the salad fresh and delicious.

Use fresh, quality ingredients. Peel and slice the cucumber, then pour it into a large bowl. Chop the tomato and slice the red onion, then add them to the bowl. Season with a basic vinaigrette of olive oil, and lemon juice. sprinkle dried oregano, salt, and pepper.

Almost any herb or combination of herbs works here. Choose tender herbs like dill, basil, parsley, mint, or cilantro. Pour and coat all the salad with vinaigrette. Dare to add other fresh, tasty ingredients such as crumbled feta, mozzarella balls, avocado pieces, or chopped fennel bulbs.

How can we keep Cucumber, Tomato Onion Salad fresh?

This salad is delicious and served cold and can be served immediately or placed in the refrigerator for 2-3 hours. This can also be made the day before and stored in the refrigerator and drain the juice (Mince the onions, add the vinaigrette). The onions will still be crispy while helping the vinaigrette to mellow and take on flavor. To serve the salad, simply slice the cucumbers and tomatoes and toss with the onion and vinaigrette mixture. But don’t forget to drizzle, lemon juice, salt, and pepper right before serving.

Ingredients

  • 2 medium cucumbers
  • 3 medium tomatoes
  • 1 red onion
  • 1Tablespoon dried oregano
  • 2 tablespoons of extra olive oil or avocado oil
  • 2 tablespoons of lemon juice
  • Salt ( 1 teaspoon) and pepper (1/2 teaspoon) to taste

Instructions

  1. Wash, peel, and trim the cucumber. You can chop or slice it or also cut it into small quarters it depends on your preference. Place the cucumber in a large serving bowl.
  2. Add sliced tomatoes and sliced red onion to the cucumber.
  3. Add dried oregano, olive oil, and lemon juice. Season with salt and pepper.
  4. Mix all ingredients until get well combined. Toss well, and refrigerate a few minutes before serving.

Notes

Add salt and pepper just before serving. Adding the seasoning early will takes the water out of the cucumber.
