If you’re trying to cut down on carbs and trying to eat healthy, Try this delicious chicken and zoodles recipe. Zoodles are zucchini noodles. I know, you may not have a spiralizing gadget.  I tell you, you don’t need one, if you own a mandolin or one of those peelers for making julienne, you can easily make zoodles.

There are many variations of chicken and zoodles recipes, but this one is zesty, garlicky, and full of flavour. It’s a low-carb, high-protein, and fibers meal, and it’s a great way to use your rotisserie chicken

Begin by spiralizing or julienne the zucchini.

    1. Heat one tbs of olive oil in a large skillet, over medium-high heat. add the zoodles and sauté them for 2-3 mins.

    2. Remove your zoodles from the skillet and place them in a colander to drain the excess liquid.

    3. Wipe the skillet clean. Add one tbsp of olive oil and heat it over medium-high heat. Add the shredded chicken and cook until slightly brown. toss in chopped onion, parsley, and cherry tomatoes, and cook until tomatoes are soft.

    4. In a small bowl, combine the remaining tablespoon of olive oil, lemon juice, salt, and pepper.

    5. Return the zoodles to the skillet, pour the lemon/olive oil mixture on top, and cook for 2-3 more minutes. Serve while hot and sprinkle with parmesan cheese.

You can serve this meal with a side salad like Cucumber Onion Salad, if you are on a low-carb diet.

If carbs are not banned from your diet, a slice of crusty bread is perfect with zoodles. if you’re going carb-free and sugar-free, jello is a great way to have your dessert and eat it too.

You can treat zoodles like it was pasta, so imagine the possibilities!

    1. Serve them with tomato sauce.

    2. You can dress your zoodles with pesto. You can use basil or sun-dried tomato basil.

    3. Kale and spinach dressed in olive oil, lemon juice, and honey can be added on top of zoodles.

Ingredients

  • 3 large zucchini
  • 3 tbsps olive oil, divided
  • 2 cups shredded leftover rotisserie chicken (or 2 boneless skinless chicken breasts, cubed)
  • ¼ cup onion, finely chopped
  • 1 cup cherry tomatoes, quartered
  • ¼ cup fresh parsley, chopped
  • Juice of one lemon
  • 1 garlic clove, minced
  • 1 tsp salt
  • Pepper to taste
  • ¼ cup grated Parmesan cheese

Instructions

  1. Spiralize zucchinis or julienne them lengthwise using a mandolin.
  2. Heat one tablespoon of olive oil in a large skillet over medium-high heat and add the zucchini noodles. Saute them for about 3 minutes until cooked but still slightly crunchy.
  3. Transfer them to a colander to drain off the excess liquid.
  4. Wipe off any moisture from the skillet and add one tablespoon of olive oil. Heat over medium-high heat and add the shredded chicken. Saute until slightly brown.
  5. Add the chopped parsley, onion, and cherry tomatoes to the skillet and cook until the tomatoes become soft.
  6. Combine the lemon juice, minced garlic, remaining tablespoon of oil, salt, and pepper, In a small bowl.
  7. Return the zoodles to the skillet and add the lemon juice/olive oil mixture. Cook for 2-3 minutes and serve. Top with grated parmesan cheese.
