For those who wish to consume healthier food and avoid carbs, this one’s for you. This recipe of zucchini noodles with chicken is so flavorful, it doesn’t feel like you’re missing out. Not all of us own a special tool to spiralize the zucchini, but this works perfectly fine using a julienne peeler or a mandolin.

Chicken with zoodles come in a variety of recipes, this specific one has some tanginess to it, and a strong garlic taste. Not only is it one way to prevent leftover rotisserie chicken from going to waste, but it’s low on carbs, high on protein and of course nutritious. First make your zucchini spirals. In case you don’t own a spiralizer, you can use a mandolin and slice them into juliennes.

    1. Put a tablespoon of olive oil to heat over medium-high heat in a frying pan. Sear in your zoodles for 2 to 3 minutes.

    2. Take the zoodles out and strain them from the extra juices.

    3. Clean out the pan with a wipe, and pour in another tablespoon of oil over medium-high. Place in the shredded chicken and sear until browned. Add in the cherry tomatoes, parsley, and diced onion until tender.

    4. Mix your lemon juice, pepper, salt, and a tablespoon of olive oil in a bowl.

    5. Place the zoodles back into the pan, top with the olive oil and lemon mix, and saute for 2 to 3 minutes. Plate and add parmesan on top.

Ingredients

  • 3 zucchinis
  • 3 separated tablespoons olive oil
  • 2 cups of shredded leftover rotisserie chicken (or 2 chicken breasts, without bone and skin)
  • ¼ of cup minced onion
  • 1 cup of cherry tomatoes
  • ¼ cup of minced parsley
  • 1 lemon’s juice
  • 1 chopped garlic clove
  • 1 teaspoon of salt
  • Pepper
  • ¼ cup of shredded parmesan

Instructions

  1. Use a mandoline to julienne the zucchini or spiralize it.
  2. Put a tablespoon of olive oil over medium-high in a pan to heat and throw in the zoodles. Sear until cooked and crunchy for around 3 minutes.
  3. Strain the extra juices using a colander.
  4. Get rid of any liquid left on the pan and pour in another tablespoon of olive oil. Place over medium-high and transfer in the shredded chicken. Sear until browned
  5. Transfer in the cherry tomatoes, parsley, and diced onion and simmer until tender.
  6. Stir your chopped garlic, pepper, salt, a tablespoon of oil, and lemon juice together in a bowl.
  7. Place the zucchini noodles back into the pan, then pour in the olive oil and lemon juice combo. Let cook for 2 to 3 minutes and plate. Sprinkle shredded parmesan on top.
