Ingredients for Lemon Garlic Chicken and Zoodles

  • Zucchini squash
  • Olive oil
  • Boneless, skinless chicken breasts
  • Salt
  • Pepper
  • onion powder
  • Minced garlic
  • Grape tomatoes
  • Parsley flakes
  • Italian seasoning
  • Red pepper flakes
  • Lemon juice
  • Parmesan cheese

How to Make Lemon Garlic Chicken and Zoodles

Ingredients for Lemon Garlic Chicken and Zoodles

    1. Spiralize the zucchini squash, or use a vegetable peeler to make long strips.

    2. Heat 1 tbsp olive oil in a large skillet over medium-high heat, and saute the zucchini spirals for about 3 minutes. They should be cooked but still slightly crunchy. Turn off the heat and let the zucchini stand for 3 more minutes until they release their juice.

    3. Transfer the zoodles to a colander to drain the excess liquid.

    4. Wipe the skillet clean and clean and heat one more tbsp of olive oil over medium-high heat.

    5. Brown the diced chicken on all sides for 3-4 minutes until fully cooked. Season with salt, pepper, and onion powder.

    6. Add the minced garlic, halved grape tomatoes, lemon juice, parsley flakes, Italian seasoning, red pepper flakes, salt, and pepper to taste. Cook until the tomatoes start to burst, about 2-3 minutes.

    7. Return the zoodles to the skillet and cook an additional 2-3 minutes until heated through. Serve with grated Parmesan cheese on top.

What if I Don’t Have A Spiralizer?

You can do two things. First, you can slice the zucchini thinly lengthwise and then julienne these slices, or use a vegetable peeler to make thick, noodle-like strands.

Let them cool down completely and place them in an airtight container. Store in the refrigerator for up to 3 days. Reheat in the microwave.

Can I Freeze Lemon Garlic Chicken Zoodles

It is not recommended to freeze zoodles. The fibers in the zucchini break when frozen, so their texture won’t be the same once thawed. This dish is best enjoyed when freshly cooked.
