What Kind of Corn to Use

Don’t worry about using any kind you want, from canned, frozen and defrosted, to fresh corn.

  • To use fresh corn, simply use a sharp knife to chop the corn off the corn, rotating it around while you do so.
  • When using frozen kernels, you need to defrost them by placing them in a strainer and rinsing them with warm water.
  • With canned corn, get rid of the juices through a sieve.

Flour. Just plain all-purpose flour.

Baking Powder. Helps the fritters get a good lift.

Egg. If you want to keep it vegan, use flax-egg instead.

Corn. Canned, frozen, and fresh are all good.

Bell Pepper. Substitute jalapeno for a kick of spice.

Parsley. Dill and cilantro are also nice.

Chives. Use scallions instead.

Olive Oil. Extra virgin oil is best, but you can use any kind

How to Make Corn Fritters

    1. Start with making your batter using baking powder, water, flour, and egg and combining everything in a bowl using a whisk. One blended, pour in the olive oil, pepper, salt, and combine.

    2. Now throw in your chives, corn, parsley, and bell pepper. Stir and put to the side.

    3. Put a frying pan on medium heat. Add in 3 to 4 tablespoons of olive oil. When it’s hot enough, place in a big tablespoon of your corn mix and press down gently on the top to have them be even. Fry on each side for 3 to 4 minutes until they gain their golden-brown color. In case they start browning fast, turn the heat down.

Keep the fritters in a sealed container. They will hold up in the refrigerator for about 3 days. When ready, pop them in the microwave or warm up over the stove for a couple of minutes.

In case you want to keep these low on calories and more nutritious, bake them instead. In order to do that you will need to:

    a. Grease a muffin tin with cooking oil, and split the batter into 12 muffin cups. Cook in the oven at 350F for 15 minutes.

    b. Line a cookie sheet in parchment paper and spoon in your corn batter. Let bake at 350F for 15 minutes. This allows you to not use any oil because of the parchment paper.

Ingredients

  • ½ cup of all-purpose flour
  • 1 egg
  • ¼ cup of water
  • 1 teaspoon of baking powder
  • 1 tablespoon of olive oil
  • 1 cup of corn kernels (canned or fresh)
  • 1 cubed bell pepper
  • ¼ cup of sliced parsley
  • ¼ cup of sliced chives
  • ½ teaspoon of pepper
  • ½ teaspoon of salt
  • 3 to 4 tablespoons of olive oil

Instructions

  1. In a bowl, mix your egg, flour, water and baking powder to create your batter. Once combined, sprinkle in the pepper, salt, and add in the olive oil before mixing again.
  2. Then add your parsley, corn, chives, and bell pepper. Whisk until combined and put to the side.
  3. Put a frying pan on medium. Add in 3 to 4 tablespoons of olive oil. When warm, divide the corn batter in full tablespoons and transfer to the pan. Press down lightly on the tops to even them out. Fry on both sides for 3 to 4 minutes until golden down. Turn the heat down if they start cooking too fast.
