Grilled Huli Huli Chicken Recipe

Ingredients for Grilled Huli Huli Chicken:

To make this Hawaiian BBQ chicken, you’ll need:

  • Brown sugar
  • Ketchup
  • Garlic
  • Ginger
  • Soy sauce
  • Sriracha
  • Apple cider vinegar
  • Boneless, skinless chicken thighs
  • Pineapple
  • Green onions

If you prefer white meat, you can substitute chicken breasts for thighs. If you’re making this for kids, you may want to omit the Sriracha.

Ingredients for Grilled Huli Huli Chicken:

Marinating the Chicken:

While many recipes include pineapple juice in the Huli Huli marinade, I skip it to avoid making the chicken’s too mushy. You can marinate the chicken for as little as 30 minutes or up to overnight using this pineapple juice-free Huli Huli marinade.

How to Make Huli Huli Chicken:

This Hawaiian chicken dish comes together quickly!

    1. Prepare the marinade by mixing ketchup, brown sugar, minced garlic, ginger, soy sauce, Sriracha, and apple cider vinegar.

    2. Set aside ¼ cup of the marinade for basting.

    3. Place the chicken thighs in a bowl with the remaining marinade, cover with plastic wrap, and refrigerate for at least 30 minutes.

    4. Preheat your grill (or grill pan). Remove any excess marinade from the chicken thighs and grill them for 6 minutes on each side or until fully cooked, discarding the leftover marinade.

Variations and Serving Ideas:

  • If adding pineapple juice to the marinade, use canned rather than fresh, as fresh pineapple juice contains enzymes that can make the chicken mushy.
  • Substitute honey for brown sugar if you prefer.
  • For a healthier option, use low-sodium soy sauce.
  • If you don’t have apple cider vinegar, white or rice vinegar can be used instead.
  • Serve Huli Huli chicken with sides like homemade cornbread, corn casserole, mushroom rice, or fried rice.
