  • Strain your potatoes, and transfer to a bowl or back into your Instant Pot insert. Spoon in your sour cream, pepper, salt, dill or chives, and half and half. Use a potato masher and puree until you reach the consistency you want.

  • Cooking potatoes in water: This is the classic way, by boiling your potatoes in enough water to cover them. Once the Instant Pot starts beeping, allow the pressure to escape. Strain and transfer back into the pot. Pour in your half and half, seasoning, and milk. Fluff up to your liking and enjoy!

Idaho and Russet potatoes are perfect for making mashed potatoes. This kind tends to be starchier than the rest. The red and golden variety of potatoes are best kept for when you’re planning on making a salad.

Ingredients

  • 3 pounds of peeled russet potatoes, sliced into 1 inch cubes.
  • 3 cups of water
  • 2 tablespoons of butter
  • ⅓ cup of milk or half and half
  • ¼ cup of sour cream
  • Pepper and salt
  • Minced chives
  • Minced dill

Instructions

  1. Put your potatoes in the Instant Pot. Cover with water, adding on an extra inch.
  2. Put the cover on. Adjust to the “sealing” setting.
  3. Select the MANUAL option. Use the +/- control keys to set the timer to 7 minutes and
    let the Instant Pot do its thing.
  4. Once your IP starts beeping, allow the pressure to release by gently rotating the lid
