Instant Pot Mashed Potatoes Recipe

Why This Method Works

Forget about stovetop mashed potatoes and delve into the magnificent world of Instant Pot potatoes. You don’t need to keep an eye on them while they cook, and they will be ready before you know it. These come out perfectly soft and airy every time, without having to boil them for 30 minutes.

How To Make Mashed Potatoes Recipe:

  • Prep your potatoes by taking the peel off and slicing them into big cubes. Transfer to an Instant Pot and cover them with water, adding on an extra inch.
  • Put the cover on and seal it into position. Set on “pressure cook” or “manual” and put the timer on 7 minutes.
  • Once the time is up, allow the pressure to release by gently rotating the lid to let air out.
  • Strain your potatoes, and transfer to a bowl or back into your Instant Pot insert. Spoon in your sour cream, pepper, salt, dill or chives, and half and half. Use a potato masher and puree until you reach the consistency you want.

Two Methods Of Cooking Mashed Potatoes Recipe:

There are two ways to make pressure-cooker mashed potatoes:

  • Steaming potatoes: I tried steaming them with the steam basket insert, granted, the potato cubes were fully cooked, but they lost their fluffiness once mashed. These would be good to use for a potato salad, but maybe not for mashed potatoes.
  • Cooking potatoes in water: This is the classic way, by boiling your potatoes in enough water to cover them. Once the Instant Pot starts beeping, allow the pressure to escape. Strain and transfer back into the pot. Pour in your half and half, seasoning, and milk. Fluff up to your liking and enjoy!

What potatoes to use?

Idaho and Russet potatoes are perfect for making mashed potatoes. This kind tends to be starchier than the rest. The red and golden variety of potatoes are best kept for when you’re planning on making a salad.

Variations for Mashed Potatoes Recipe:

  • For a touch of tanginess to your dish, add in some sour cream, and chives or dill. And just like that, with a few steps, you’ll have yourself the most delicious mashed potatoes.
  • Add a pop of flavor and creativity by garnishing your dish with some caramelized onions.
  • If you’re wanting to keep it vegan or dairy-free, use olive oil and almond milk instead. This too allows your potatoes to come out soft and tasty.
  • For the ultimate barbecue plate, mix in some roasted garlic for a stronger enhanced flavor.

Helpful Tips!

  • Your potatoes will cook depending on the size of the cubes. If your potatoes are sliced into quarters, set your timer to 10 minutes, to 7 minutes in case your slices are an inch big, and 4 minutes for half and inch pieces.
  • Substitute the butter and half-and-half with olive oil and almond milk for a vegan/dairy-free mashed potato dish that is just as soft and flavorful.
  • Take your mashed potatoes to a new level by garnishing your dish with roasted garlic or caramelized onions.
