  • 1. Cook your ground beef in a large pot over medium heat until no pink is showing.
  • 2. Once the beef is cooked, add carrots, onions, celery, and garlic

  • 3. Next, add the tomato sauce, beef broth, the canned petite diced tomatoes, half a cup of water, oregano, basil,salt and pepper
  • 4. Bring this to a boil and let simmer for 5-6 minutes. Add the ditalini pasta and cook for 10 minutes more or until the vegetables and pasta are cooked
  • 5. Stir the kidney and cannellini beans and cook until these are heated through.

  • 6. Give it a taste and and a just the seasoning to your taste, if you want a thinner consistency add water.
  • 7. Make sure everything is well mixed and the beans are hot. Serve with grated Parmesan cheese.

  • 1 pound lean ground beef
  • 1 finely chopped yellow onion
  • 2 medium carrots, diced
  • 3 diced celery ribs
  • 3 minced garlic cloves
  • 3 (8 ounces) cans tomato sauce
  • 2 (14.5 ounces) can beef broth
  • 1 (14.5 ounces) can petite diced tomatoes
  • 1/2 cup of water
  • 2 teaspoon granulated sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 8 ounces dry ditalini pasta
  • 1 (15o ounces) can dark red kidney beans drained and rinsed
  • 1 (15 ounces) can cannellini beans, drained and rinsed
  • Parmesan cheese, freshly grated for serving
  • Salt and Pepper to taste

Instructions

This soup is one of the best I have ever made! I substituted hot sausage for the ground beef based on some reviews, which added amazing flavor and heat to the soup. I will definitely be adding this recipe to my regular rotation!
