What means VONGOLE?

Spaghetti alle vongole, spaghetti with clams in the Italian language, is a typical Italian seafood dish. It is cooked all over Italy and is also known in the rest of the world.

It’s a very simple recipe, requiring very few ingredients. But like all simple recipes, it requires a certain amount of skill to make it a successful and tasty dish.

Ingredients for Pasta Vongole

For this Pasta Vongole recipe, we will need whole clams, for a perfect recipe you must use fresh clams. however frozen clams can be used too.

For pasta, spaghetti is the best choice but linguine or tagliatelle can also be used.

To make the sauce we’ll need white wine, olive oil, fresh garlic cloves, onion, a pinch of chili flakes optional, a few teaspoons of fresh lemon juice, butter, and fresh parsley.  The white wine can be replaced by an additional squeeze of lemon and half a cup of clam juice or stock (chicken or vegetables).

Butter for the creamy touch, you can use both salted and unsalted ones.

Salt and pepper to taste.

How to Make delicious Pasta Vongole

Clean and sort the clams. Make sure that all clams are closed before cooking. If they are open, don’t use them.

To prepare the clam sauce, put the chopped onion in a frying pan and brown in olive oil. Then add the clams, and white wine and cover the pan with the lid, until all clams get opened. Strain the clam juice through a colander and drain the clams well and set aside.

Return your large pot to the boil with simmering. Add the pasta, and cook in the clam juice. Pasta must be Al dente.

Pour the clam juice into a large saucepan, add the butter, the minced garlic, and the chili flakes, and bring to the boil. Put in the pasta and leave over high to medium heat to reduce the juice. Finally, add salt and pepper.

Add the clams to the sauce and toss in pasta until get well coated with sauce, along with the chopped parsley.

Ingredients

  • 1 kg (2lb) clams in shells soaked well in advance
  • 500 g (1lb) pasta spaghetti or linguine
  • 4 tablespoons olive oil
  • 1 minced onion
  • 4 garlic cloves peeled and sliced
  • 1/2 glass of white wine
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons butter
  • 1/4 bunch flat-leaf parsley, washed and chopped
  • salt and freshly ground pepper to taste
  • 2 Tablespoons chili flakes (Optional)

Instructions

  1. Make sure that all claims are closed before cooking. Wash the clams in a bowl of salted water for 20-30 minutes and drain.
  2. Keep a large pot of simmering water ready.

    PREPARE THE CLAM SAUCE:
  3. Put the chopped onion in a frying pan and brown in olive oil.
  4. Add the clams, drizzle with 1/2 glass of white wine, and cover the pan with the lid. Open all the clams over high heat.
