HOW TO MAKE AMISH MACARONI SALAD
Step 1. Following the packaging instructions, boil your macaroni, strain it, and allow it to cool. Meanwhile, mix your dressing components together
Step 2. Stir together the eggs, cubed celery, minced onion, macaroni, and sweet pepper.
Step 3. Pour in your salad dressing and combine well. The pasta tends to absorb a good amount of dressing, so feel free to make a lot of it. In case you prefer a drier salad, only use from ½ to ¾ of the dressing.

2. In case you prefer a less creamy salad, only add ½ to ¾ of the dressing.

AMISH MACARONI SALAD

Ingredients
- 1 pound of salad macaroni
- 4 minced hard-boiled eggs
- 1 cubed onion
- 3 cubed celery ribs
- 1 sweet orange or red pepper (take seeds out, and cube it)
Dressing:
- 2 cups of light mayonnaise (not Miracle Whip)
- 1/2 cup of sugar
- 1/8 cup of yellow mustard
- 2 tablespoons of dill pickle relish
- 1 tablespoon of white vinegar / 1 tablespoon of apple cider vinegar
- 3/4 teaspoon of celery seed
- 1/4 teaspoon of salt
- paprika
Instructions
- Follow the packaging directions to boil your pasta, the strain it.
- Stir together all the dressing components.
- Mix your eggs, cubed pepper, onion, pasta, and celery. Add in the dressing to your taste and combine well. Let chill in the fridge for an hour before enjoying.
